I have no experience with setting up a S3 datasource and cannot seem to find any information about this on the forum? Can someone help me set this up?

Yes I can help you:
1. You must create an amazon S3 account, remember that it's not free but it's not expensive (http://aws.amazon.com/s3/)
2. When your account is created, you will get two key:
- Access Key ID
- Secret Access Key
3. After that, you can download a free product, like Cloudberry Explorer to create a bucket (it's a kind of directory)

Note: the bucket name must be unique over the internet

4.It's now possible to configure Remote Desktop Manager data source with these three value (Access Key ID, Secret Access Key and Bucket name).

Why?
I'm performing performance issue using the free Online devolution DS.
But with more than 3200 entries is becoming veeeryyy slowww when editing or changes something
What do you suggest to have more speed as free DS ?

You can still use S3 but it's not recommended to create a new data source with it. We don't want to add new features with S3. We still support Access even thought it been deprecated for more than 5 years.

MySQL or MSSQL ?
You can't go wrong with either. If you already have infrastructure in place (on prem or cloud/hosted) or if you have expertise in either then go with that option.
If not, instead a coin flip, I would personally go with MSSQL on Microsoft Azure as my go to option as I'm more knowledgeable in MSSQL. Your mileage may vary.

PS: Are you planning to support NO-SQL DB as Mongo or DYNAMO - Ore are not suitable for this scope?
NO SQL like Mongo are not planned for now. I will requires us a complete rewrite of our data access layer.
