Is there a shortcut key for setting a VM window to "View Only"? That would be ideal for me! I just can't find a way to do it!

Yes. Sorry. That's what I meant :)
I use RDM with some automation testing I'm doing. It'd be great to start some automation and set to View Only quickly so I don't move the mouse and disturb the automation.

We've been working on revamping the forum, and have had some problems with the cache!
It should be fixed, but if not, clear your forum cookie... that should do the trick!

We will add a customizable shortcut for the View Only button. You will be able to set it in File > Options:
I think this should help you in your use-case. When the next version of RDM is out, could you give it a try and check if this works as expected?

WIth the latest version I downloaded today the CTRL + Viewonly button DOES set all the windows to View-only. Great!
However, there is no option on Keyboard > View yet. See image. Or maybe you meant the release after this one (2.6.0.0)

The shortcut feature was added after the release. It will be in another update.
