Remote Desktop Full Screen
Is there a way to have the session open up undocked and in full screen automatically?

You can select Fullscreen in the Display mode

Where do you mean? I'm new to this program not sure where everything is yet.

If you edit your session, you can change the display to be embedded, external or undocked
