We would like to know is there a configuration setting that can restrict the software so that it is only usable as a host (allowing remote control) and not a guest (taking remote control)?
We would like to deploy to many machines, but do not want to give users to take control of other machines in the network.

You can find the option "Remote Control Mode" in Options > General. Set it to "Allow remote control (server only)".
For your deployment, the option name is "ControlMode" and the values are defined as:
NOW_CONTROL_MODE_BOTH 0
NOW_CONTROL_MODE_CLIENT 1
NOW_CONTROL_MODE_SERVER 2
So something like this should work:
wayk-now config --global ControlMode 2
